Creamy DF Broccoli & Apple Salad

Here’s a quick & easy salad that’s full of antioxidants. Even better, it’s slightly sweet, thanks to the addition of fruit, so it’s a great way to introduce salads to those who dislike raw vegetables. Best yet, it includes a light, but creamy dairy-free dressing.

Salad Ingredients:
 

  • 2 cups broccoli florets

  • 1 chopped apple

  • ¼ cup shredded carrot

  • ¼ cup diced celery

  • ¼ cup diced red onion or radish

  • ¼ cup chopped nuts – such as pecans or walnuts (optional)

  • ¼ cup dried fruit – such as raisins, cranberries or chopped dried apricots (optional)
     

Dressing Ingredients:
 

  • ¼ cup mayonnaise

  • ¼ cup dairy-free yogurt

  • 1 Tbsp lemon juice

  • 1 Tbsp sugar, honey or syrup (optional)

  • Salt and pepper to taste
     

Directions:
 

Mix all salad ingredients together in a large bowl.
 

In a separate bowl, mix together all dressing ingredients. Pour dressing over salad and mix thoroughly.


Add salt and pepper to taste.Keep refrigerated until ready to eat.
 

Makes about 3 – 3 ½ cups of salad. Recipe can be easily doubled.
